My company is looking at turning on protected  mode for documents but before I am trying to figure out is there is a difference between the read only mode that docs currently open in versus protected mode that can be enabled through GPO.

By default, Word forces Protected View for documents that originate from internet locations (for example). In the user interface, you can control this by using the options at File | Options | Trust Center | Trust Center Settings | Protected View. Some older file types will also trigger Protected View; see File | Options | Trust Center | Trust Center Settings | File Block Settings.

Read Mode is enabled by default for uneditable files, such as e-mail attachments. To prevent Word from going to Read Mode, clear the option to "Open e-mail attachments and other uneditable files in reading view" at File | Options | General.
