Use Protect Workbook feature from Review Tab. It will not allow users to play with the structure of workbook.
Password Protecting Hidden Columns in Excel
How do I hide columns then allow someone else to use the spreadsheet without them being able to unhide the columns I don't want them to see?

2017-10-24T11:47:44+00:00 Yes, you are right. By that command, you control Sheet structure, one can not unhide sheets.
For your issue, What I will suggest, use Protect sheet command which is in review tab. Once you protect the sheet, it will not allow user to unhide columns. In case you want user to work on other columns/cells, then before protecting sheet, make other column/cells as Unlocked by going to cell format, last tab "Protection". Here you have to uncheck the Locked command.
