Unfortunately, the Default PivotTable option is an Office 365 subscriber feature, so it's not going to show up in your perpetual version.

I am using Windows 10 with Excel 2016 Professional Plus MSO 16.0.4549.1000, 64-bit. (This is not a Home Program version)

Did you get this sorted, I am having the same issue
Has anyone found an answer to this. I have the exact same issue. I want to set my default pivot table, but I do NOT have the option under data. Was this option remove with Excel 2016?
Ok, I went through your suggested steps and did a repair of Office.
Of course, nothing has changed. The Excel option is still not available.
Thank you for waisting an hour of my time.
Any other suggestions?
