I'm running Office Pro Plus Excel 2016 and I've checked for updates - I'm fully up to date (Version 1807) Monthly Channel
Whenever I use the Change Data Source button on the Analyze tab of Pivot Table Tools it blanks out my Pivot Table - removes all the options I had set just leaving the Field List.
It doesn't matter whether I change the source or just leave t as it was and click the OK button the result is the same and the Pivot Table is wiped out!
Please help !

I tried both the quick repair and the full online repair.
No difference - the problem is still there :(
Try repairing your Office installation. First try Quick Repair (takes 5 - 10 mins) , if that doesn't help then try Online Repair (Takes more than 30 mins but less than 1 hour in general)
Windows Key+I > Apps > Locate Office & click > Modify > Quick repair / Online repair
