OneNote looks different from tutorials

I am trying to learn how to use OneNote, but all the tutorials I find on Youtube etc look very different from mine.  This came on my new laptop running Windows 10.  I do not have Office 365, nor do I want to purchase it.

For example, below is a screenshot of a pdf I opened in OneNote, highlighted and now want to save with a title, but I see no way to do this. When I look for help online all the videos and pictures show very different layouts, with buttons for File, etc across the top, as well as things like Research, which I don't seem to have.

Hello catsknit62, 

The OneNote version you're currently using the the OneNote desktop application. As you stated, features and options are different with the OneNote 2016 and desktop application. However, the feature you're looking for is not yet available. You can send a feedback regarding your concern for the developers will take a look at this. You can provide the feedback here at the OneNote UserVoice
