I have researched and researched.
When deploying to Android phone, my icon shows up.
When I test on an iOS simulator, the icon displays fine. I don't see a splash screen when the app opens.
However, when I deploy to any iOS phone to test the icon and splash screen are Xamarin and NOT the icon I'm using.
I have updated ALL the icons on Assets. I've researched to death. What is the solution to resolve this?

Firstly, Use this tools to create your icon.:https://developer.apple.com/design/resources/
Please check your icon put the correct folder like following screenshot(If you run you application in the iPhone, just put the image like following screenshot 2x 120*120 3x 180*180).
Then If you set the icon correctly, please delete the application in your device. Then open your project folder in finder. delete the bin and obj folder. rebuild it.
Still not working. i created a new Icon. replaced the 2 per your image. Still displaying the Xamarin icon and not my icons.
I am using below to generate the icons.
Did not see a tool on the apple developer site that would do this.
I've done everything. Still doesn't work. Even followed the information on this website.

Please try to clean your project in the build tab of VS for mac
I am using VS 2019 on Windows. I'm not using it on a MAC.
I have cleaned per your screenshot.
I have deleted ALL bin & obj directories.
I deleted the AppIcon from Assets and recreated it.
No matter what I do, the icons do NOT show up on ANY iPhone.
This issue is related to the IDE, You can report this issue in VS directly like following screenshot. And try to move your project to Mac, change the icon in the VS for Mac
How are you accessing that? Are you using Visual Studio 2019 Professional? This is what I see. Thanks

I have the same issue as you - the default Xamarin app icon when building my project using Visual Studio 2019 on windows (using both community and professional edition16.11.0) to a connected iPhone BUT the correct app icon when building and deploying to a simulator.
There have been older discussions about this issue which were attributed to a specific version of Visual Studio which supposedly was fixed in a subsequent release of VS but it has never worked for me.
if you do not have send feedback selection in the VS, you can submit a problem from Visual Studio Installer, select Provide Feedback icon > Report a problem.

@MAGIC MAGIC did you ever resolve this? Its November, and I am coming across the same issue.
If you are using iOS Hot Restart to launch your app directly from Windows onto an iOS device then you will not see your app icon, it will be generic. The technology runs and interprets your source code inside of an app bundle. See https://learn.microsoft.com/en-us/xamarin/xamarin-forms/deploy-test/hot-restart#limitations
@James Montemagno even after disabling Hot Restart, the icon doesn't render when debugging using a phone. Custom launch storyboard screen does work tho. Any suggestions to get the app icon working?
