I need to write words to wrap around a circle. I have done this before but now, with the current version of Word (Office 365), the menu item to do this, Transform, is missing. Here is my screenshot. Where is it? I also looked in the ribbon customizer; not there as an option.

Expand the Text Effects button (the caption is not displayed on your screenshot, but I have enclosed it in red)
and you will see:

Thank you, that is where the Transform control is in Word 365.
I tried this support page earlier but it did not help. Must be for an earlier version of Word.
