Use a formula like =A1+1 and drag down, that makes renumbering easy in a usual sheet and automatically within a table.

There are two types of a colour filter in excel sheets, one of those choices is the (Filter by Color) the other is (Sort by Color) and here is the problem, if I sorted by colour I can't disable that sort later or back to the original sheet sort! it seems like the sort of the sheet will be changed forever, is there any option to undo?

That's the usual behavior with any kind of sort.
The solution is to create a helper column before with a continuous numbering (1,2,3, etc.), then you can sort later by that helper column.
