I am using Excel in Office 2016. The last digit of the "Sum" value, in the Status Bar, is only partially visible (i.e., If the sum of a group of selected cells is 1179, only a portion of the "9" is visible. What can I do to make the entire value visible? If I right click the Status Bar, deselect "Sum" and then reselect it, the full value is visible until I select a different range of cells... then the last digit is partially hidden again.

Mine does not ever show the last digits. I can toggle it on / off / on, etc and it is just missing.
Very odd! My guess: it is a display driver thing; that is, the display resolution is incompatible with the Excel window resolution.
Just for grins, try right-clicking the Status Bar, toggling the operation. That is deselect, then re-select Average and Sum.
Edit.... Oh, I see that is what the OP (Charlie) did in Sep. Did you try it, too?
Don't know if/how you can make the correction permanent, though.
