Base on your reply, I have several methods for you to improve your Excel client when issue happen:
1.Click File > Account > Update Options to update Office 365 to latest version(1908).
- Try Excel in the Safe Mode(Hold Ctrl when open app) to determine whether background programs are interfering with Excel.
3.If the issue only occur in the specific workbook, download it and upload again in SharePoint Online, see if you can open it in app.
