Starting Over... Open Publisher > I see Featured -vs- Built-In - which do I choose? Then, I see Blank 8.5 x 11 and many others - which do I choose? If I choose Built-In, I see Arrows, Bounce none say Brochure. I see Options tab but nothing re: creating a trifold. I need step-by-steps. Thanks.
I think it is time you just jumped in. Featured vs built in...just choose one and if it isn't the right one then go with the other (I would go with built-in fwiw).
Arrows, bounce...those are styles under any of the template categories and and types of brochures. I am looking at Pub 2010 and it offers Informational, Price list, and Event. Open one of each to see which is laid out the way you want. Then choose one and modify it to fit your needs.
Just remember that you can always back up one step with Publisher. If you make the wrong choice you can look at the top left hand corner of the menu for the undo icon, or if you prefer just Ctrl+Z to undo your last action.

Some of these are a bit dated but the techniques are basically the same.
I think there are also Publisher how-to videos on youtube if you prefer that way to learn.
As I suggested above, I don't believe that you will be able to convert the scanned picture(s) of the old brochure into editable content for Publisher. By that I mean you won't have text boxes, picture boxes, formatting and layout, etc. Use your old brochure to give you design ideas to create a new one in Publisher.
One last piece of advice; save your work often, and backup often, and backup your backups. Just assume that one day the Publisher file that you have spent hours on will go corrupt. You won't be able to open it. If you planned ahead and have a backup file you won't have to recreate the whole thing from scratch. Just think how much easier it would be now if you had a backup file of the hard copy brochure you are trying to duplicate.
