I recently purchased office 365 and installed on Macbook. However, I can't see the option of Get and Transform Query / Power Query in the Data Ribbon.

It is 16.37 and I purchased it last month from MS store. Therefore, i believe that it must be the latest one.
Yes it is the latest build.
To refresh queries generated from Text, CSV, XLSX, XML or JSON files, please perform the instructions provided in the link to update Refresh command.

Sorry, i m not sure if I got it right. In the earlier version, I had a data table. I used to click on Data ribbon, an in the "Get and Transform" Tab , I used to select the "From Table/Range".
I went though the link you shared and refreshed as suggested. But there is no help on how to build the power query from the table.
Let's try to look for it under Customized Ribbon.
Go to File > Options > Customize Ribbon > Choose commands from: Commands not in the ribbonn. Look for that missing tab. Click Add.
Also try Under Customize Ribbon > Under Main Tabs, check and uncheck Data. Click OK.
