Extract Data from Form to Excel Spreadsheet

I am trying to help a friend who runs a small business. He has several 1000 bills of sale (Excel Form) from which he would like to extract the data to a single spreadsheet - with each row in the spreadsheet representing all the data from a single form. Is this possible and how would he go about it?

I'm attaching an image of a sample form in case that would help understand his problem.
