Hello all
I am running Office 365 newest version for the mac but there seem to be things missing from the Developer ribbon. Such as the drop-down menu and properties.
Also, the date picker seems to be missing also.

Below is what I created in my windows 10 excel 2016 in that developer ribbon it creates the drop-down box and shows the properties unlike the above when I load the spreadsheet in excel Mac.

I'm afraid that the date picker feature you mentioned aren't included in Excel for Mac now.
I kindly suggest you vote and leave your comments there to let our product developers know your requirements and suggestions for product improvements. If our product developers have some updates on the feedback you have submitted, they will update the information there directly.
About the drop-down list, you can the data validation feature in Excel for Mac.

Some useful tips here - why the deveopers don't keep the good features of the windows version I do not know. As alegedly Macs are better. Mind you I only use if because of work.

the validation box is different from the Developer drop down list as in my example, is that also not a feature in Excel Mac?

How did you create the list element? If on your PC you used a Content Control rather than a Legacy Form Field Control. Although Mac Office does now support the use of Content Controls created in a Windows version it does not yet have the UI tools to create or modify them.
If it is a Legacy Form Field Control it would be a Combo Box rather than a Drop-down List. Right-click it & select Format Control.
It's hard to tell from a screen shot but it actually appears to be a Data Validation List. If that's the case, select the cell then either go to Data> Validation in the main menu or click the Data Validation tool on the Data tab of the Ribbon.
