In your screen shot, the dialog displays an Options button. Click on that, select the Styles tab and choose Heading 1 from the list of styles. Then OK out.
WORD for MAC - Insert chapter heading into Header
I have Office 365 for MAC.
I am trying to insert CHAPTER HEADINGS (e.g. Heading 1) into the Header of my Word document.
I can get to Header & Footer/Field/Links and References/StyleRef but no further (ref. screen capture).
The instructions I find online are all for Windows and the menus do not correlate.

- Choose Format>Document from the macOS menu bar.
- Click on the Layout tab.
- Check the option for Different odd and even in the Headers and Footers group.
- In the header, set the text alignment for adjacent pages to either right or left.
