User is getting a 500 error when using her OWA. Outlook is the only app that she gets the error with. It does not matter what browser she uses. We cleared all cache in all browsers. Signed out & back in. Also he local outlook works fine.

Thank you for raising your concern in this community.
There are different reasons for this issue to occur. Assuming that the user is on premise which you can verify by the checking is OWA link in outlook client.
In that case please have a look at this article OWA or ECP stops working after you install a security update - Exchange | Microsoft Docs it has the steps to take in such situation.
If this doesn't apply I your situation, please get me more details about the user mailbox and the deployment type, on-premise, online or hybrid.
