I've created a microsoft list and it was working for several days, but now a lot of the rows are missing (everything after G in the alphabet). Any suggestions?

According to your description, I would like to know if the situation happens randomly, or you can reproduce it again. If you can reproduce it again, please post back and let me know.
If it happens randomly, please check the Activity of this list as in the following screenshot. Check if other users have deleted these items.
If no user has deleted these items, as the whole rows (the items in the list) are missing, I am afraid the data has been lost. If you want to find out the root cause of this situation, I would like to suggest you contact your admin/IT department and let them create a support ticket via Microsoft 365 Admin Center> Support> New service request. That support team there will have the correct channel and resources to help you investigate more and find out what exact reason has caused this situation.
