I have a SharePoint site where all three owners have left the company. But aside from assigning the new owners as Admins, I can't see where there's an option to delete the old owners and add new ones. Any oideas?

Dear Patrick Moore (patrick.moore),
Good day! Thank you for posting to Microsoft Community. We are happy to help you
Generally, there are several ways to remove and manage a user as site administrator of a SharePoint site.
1: If you are the in this SharePoint site, you can let them go to Home page of the site > Members it would display all members and Owners of this SharePoint site > Click on the user > Remove from group to remove this users.
2:However, if you are a SharePoint admin or Global admin of your Microsoft 365 tenant, you can also directly add yourself or other users as site administrator in SharePoint admin center.
You can go to SharePoint admin center > Sites > Active sites > Select the site you would like to add as an admin > Under Permissions tab you can add yourself as admin by Manageto remove the other admin users.
Note: Sometimes it may take a while to take effect after you remove the user as site admins before the user can access.
