From your description, it seems that you want to add several Due dates under one task and you also want to link to individual checklist items.
If my understanding above is right, we’re afraid that there is no out of box way to achieve your requirement. We have also tested a lot and searched a lot, we may not find any way to achieve your requirement.

Personally I completely agree with you, this is indeed a good addition to the current features of Planner. It would be definitely ideal if we can add feature to add multiple due dates and link to different checklist items. Thank you for bring thing to our attention.
