I can't provide precise steps as I don't have a connection to Exchange nor the Power Query Exchange connector. However, the principal remains the same whatever the data Source you connect to - that requires an authentication method: Excel stores your initial choice (and credentials) so you don't have to authenticate each time you connect to the same Source or refresh your query
As I understand you initially chose "Exchange account" and would like to get the following dialgo box again to choose "Microsoft account"
- Within Excel: Go to Data (tab) > Get Data > Data Source Settings
- In the Global Permissions search for your Exchange server name/domain name (I suppose - that's where I can't be precise)
- Select that data Source and at the bottom of the dialog box > Clear Permissions > Delete
You should now get the above dialog box again...
