The Mac version has an updated dialog that is not yet in the Windows version. What you see in Windows is what used to be on the Mac. There's no guarantee the Windows version will get the updated dialog.

Hi I'm struggling with a very basic Question - why does my Select Data Source window look like this ?

As per your description, please don’t worry, we can work together to narrow down and resolve the situation.
Based on my test result, the first screenshot of "Select Data Source window" is Excel for Mac OS. and the second screenshot of "Select Data Source window" is Excel for Windows OS.

Since you post our question in Mac category and I believe you are using Excel for Mac OS.
