I use the sort feature in Excel a lot, and nearly every time I need to sort "largest to smallest", but the default is "smallest to largest." How can I change the default to be "largest to smallest"

This is not possible, there is no way to control this in Excel.

If you want to sort the data by one column only, select a cell in the column, then click the ZA-Button.

If you need that often you can also add the button to the QAT. https://support.microsoft.com/en-us/office/customize-the-quick-access-toolbar-43fff1c9-ebc4-4963-bdbd-c2b6b0739e52
