I am having the same issue and it just started today, 4/18/23. It was working fine yesterday.

When adding the document library webpart to a page in sharepoint, you can no longer change the name of the webpart. The webpart will be given the library name, you can change this on screen but when you publish the page it reverts back to the library name. We often publish several views of the same library on a page so this has changed all over our intranet. Not being able to label each part differently is painful, and whilst I can add a text webpart above it just looks stupid.
This is not happening on the lists webpart only on the document library one.
Is there any fix to this issue or ETA on when it will be fixed?

Edit to add: We had opened a ticket on this, however this all corrected itself on Thursday last week.

I am having the same issue and it just started today, 4/18/23. It was working fine yesterday.
My coworker and I are having the same issue, we are trying to mirror another page where we renamed the document webpart to Recent Announcements, but after making changes it reverted to Documents, and on our other page it won't keep the title change at all. While there is another webpart for highlighted content that we haven't edited recently does keep its edited title. Wondering if there was some update that could have caused this change?

Based on your description, I understand that currently you cannot change the name of a document Library through the Library Web Part.
I have encountered the same situation in my tests, but so far I have not been able to find documentation that specifically addresses this phenomenon. At the same time, I can change different views: Use the Document Library web part - Microsoft Support
You can temporarily change the name of the document library in the following ways: Go to Library- Library setting-Name:
However, we would like to make sure if you could change the name through the Web Part before, if you could change it this way before, I think it might be related to the SharePoint server, so we kindly recommended you can raise a service request in Microsoft 365 admin center, which the support there has the related permission and resource to help you check from the backend.
