Proofing Language Default Can't be changed - OneNote (Mac)

I would like my default proofing language to be British English instead of US english. Onenote will only allow me to change proofing language for selected text (Tools>Set Proofing Language) and then when I open a new page it reverts back to US english. My Mac OS keyboard and default languages are set to British english in system preferences.

People have been complaining about this for years and it's absolutely wild that you haven't fixed it. I'm honestly about to give up on my office 365 subscription and switch to a competitor if you can't provide me with a solution. It should not be this hard. Absolutely bizarre.

We aren't all from the US so why is Onenote so resistant to me spelling things correctly.

I've also been dealing with this issue, for years. I'm sick of it at this point. Onenote will work for weeks and then all of a sudden a I'm getting told a bunch of stuff is spelled wrong. And surprise surprise, it's everything with the added U. I'm in Canada, it's expected to spell things the Canadian way. Not the American way. So obnoxious that this is still an issue.
