Figured it out. The issue was the primary calendar was set to always display.
Once I turned this off, everything worked as desired.

The resolution in this thread does not solve my problem, however. If I follow the instructions from the previous thread solution, I am left with every event having every color:
Does anyone know why MSFT makes this so challenging? To accomplish the above I spent several hours researching/watching videos, and had to set up a dozen views for reasons I don't understand. I am not sure what a view is, and why I have to create multiple ones to get different colors to work. Why can't we just create categories and color code them as in Outlook?
