    Dear Tancredi,

Greetings! Thank you for posting in Microsoft Community. We are happy to help you.

Per your description, I understand your concern is that TODAY() function doesn't update automatically in Microsoft list.

As far as we know, we're afraid there is no build-in feature in SharePoint list and Microsoft List to auto-update the TODAY() function. We apologize for the inconvenience.

However, per my searching, Power Automate flow can be a workaround. Here is a similar thread: Solved: Modified Date & Todays Date - Power Platform Community (microsoft.com)

If you need further help on Power Automate Flow, considering that we have a dedicated channel Microsoft Power Automate Community, for you to be assisted properly, we sincerely recommend you go to that community and post a new thread. Thanks for your understanding and cooperation! Hope you have a nice day! Stay safe and healthy.
