As per your description, in SharePoint, you can create relationships between two lists using lookup columns. However, SharePoint's out-of-the-box lookup columns do not directly support conditional dropdowns (cascading dropdowns) which dynamically change the available options based on a previous selection (such as showing different choices based on the Product Family selected). Also, lookup columns don't support Choice (multi-valued).
We feel your pain due to this limitation and we’re really feel sorry for it. However, we appreciate your understanding. I do understand the inconvenience and apologize for it.
Meanwhile, I believe Microsoft has been consistently modernizing various aspects of Microsoft SharePoint, and it's possible that may receive updates in the future.
Personally, I completely agree with you, this is indeed a good addition to the current features of Microsoft Office 365 application.
