MS Booking: Setting variable staff availability by day

I want to set up a booking page for a research project with a group of researchers who need to indicate when they are available to interview study participants.

I need the researchers to indicate specific availability (tends to vary by day, and many staff do not use outlook for non-work related conflicts). Is there a way for staff to set specific hours day by day over a period of time to indicate their availability?
