I have multiple devices with Documents in the device's default documents folder. I want to link and sync these to Onedrive. I want them to be in the same folder called "documents"; that way, when I open one on a device, I can edit it and save it, regardless of which device I'm using. Devices: , two Win10 towers, one Win11 tower.
I want to avoid 3 subfolders in onedrive called PC1_Docs, PC2_Docs, PC3_Docs.
I want one big happy Microsoft family of documents in the cloud that I can open on any of the devices.

O365 Family?
Are these 3 PC's owned/used by 1 person or are they family members with O365 Family?

You are good to go. The Documents folders on all devices will merge and mirror exactly to all devices. Within the Documents folder you cannot choose specific folders to sync or not sync. It's either sync ALL files or NO files.

If you want to keep those subfolders from syncing to OneDrive you will need to remove them from the OneDrive folder entirely.
If you want to keep those folders only in the online OneDrive and not on your PC, you will need to remove them from the Documents folder but not from the OneDrive folder. You keep them in the OneDrive folder and uncheck them at "Choose folders".
If the folders PC1_Docs, PC2_Docs, and PC3_Docs are located within the Documents folder you cannot stop syncing them. If you try you will get this message:
