Excel keeps changing the date format

Hello. I am working on a data sheet that involves a lot of dates. I have 2 date tabs labeled Start and End, with each being a date range. I set them on long date format just to see the day of the week (plus conditional formatting rules for weekends). I have to manually change the days a lot, and when I do I'd like it set to yyyy-mm-dd format. However, my region displays dates as dd-mm-yyyy, and whenever I change my date format using ctrl+1 to yyyy-mm-dd, then set it to long date format, it then changes back to dd-mm-yyyy. I tried to change my system settings to limit excel to using a different English region, and still it does the same issue. How can I fix this?

(I am on MacOS Sonoma 14.0 running on an M1 13" MacBook Pro)

For one thing you can update Sonoma. Version 14.2 now is in general release. The initial release was riddled with issues including similar to this but some have been resolved.

Confirm that Office is fully updated as well. It should be at 16.79.2 or later depending on your selected Update Channel.
