Updating Fields with Modified Date - Parallel Flows Not Updating All Modified Fields

I am trying to update a list with the date a field was modified so that we can track when tasks were completed automatically using Power Automate. If I update just one field, it works great, but if I update multiple the flow only picks up 1 or 2 of the changes. I'm assuming this is because I'm using VersionNumber, but I'm not sure how else to do it.

Currently, the "Get changes for an item or a file (properties only) action using the expression sub(int(triggerOutputs()?['body/{VersionNumber}']),1) in the 'since' field. When the flow runs it says it was successful, but says that fields weren't changed (even though they were). I can't get a picture to add in here for some reason, but the flow goes like this:

When an item or a file is modified -> Get changes for an item or file (properties only) -> Condition = HasColumnChanged is equal to 'true'

Totally open to a new flow if this isn't the way to go about it!
