Based on your description, my initial understanding is that after you changed the OneDrive path and restarted your computer your OneDrive save path remains the same as the original save path. If my understanding is wrong, please feel free to point it out.

First of all, you mentioned ‘I have changed my one drive folder settings which also contains my Desktop and Documents.’ I would like to know in what way you have changed your OneDrive save path, and did you follow the steps in the following link? I would like to know by what means you have changed your OneDrive save paths, did you follow the steps in the following link?

Secondly, could you give us some details? For example, when you mention "However, whenever I restart my pc, the settings on path below go back the older onedrive settings so I get a mix of files in two different folders that I have already merged.", is it that you need to choose the location after you change the OneDrive save path and then restart your PC and link OneDrive again, or is it that you restarted your PC and OneDrive was already connected automatically and chose your previous save path?
