In the main menu bar go to Help> Excel Help then enter the search term keyboard shortcut. Note that ithe listt may not be 100% accurate due to not being updated since Microsoft made some changes in the name of parity with the Windows version. Also, on laptops/condensed keyboards it may be necessary to include the fn key unless you change the preference for "F" keys in System Settings***.*** If you have any problem don't hesitate to post here in detail.

However, there isn't a keyboard shortcut for the feature you asked about. Neither is the command available for assigning a custom shortcut. If formatting several cells in succession you can use Command+Y to repeat the last action. Perhaps someone can comment on writing a macro [recording won't do it] which can have a shortcut assigned to it.

There are several lists of shortcuts on the Mac, but none have an equivalent to the Windows Excel shortcut to fill cell with currently selected fill color. For example, https://support.microsoft.com/en-us/office/keyboard-shortcuts-in-excel-1798d9d5-842a-42b8-9c99-9b7213f0040f#PickTab=macOS . As a workaround, it is possible to create shortcuts that fill the currently selected cell with a color following steps at https://support.microsoft.com/en-us/office/create-a-custom-keyboard-shortcut-for-office-for-mac-6bbeb90e-96d9-4e03-b199-fc026ebdc321 .

The article on how to create a keyboard shortcut is accurate but a keyboard shortcut cannot be assigned to the operation described by the OP or to the Fill Color tool, itself. As I wrote in my reply to the OP, those commands do not exist in the UI. The most one can do is assign a keyboard shortcut to the More Colors command which launches the OS Color Picker. Anything more would require a VBA procedure.

If you are able to demonstrate otherwise please list the steps & provide screen shots.
