We went through your post carefully and do understand your demand of allowing users only able to view their own assigned tasks, as filters can be removed in a list and the users will be able to see all items with read permissions for the entire list. Please let me know if I made any misunderstanding.
For such a demand, we are sorry to convey that currently there has no out-of-box/built-in feature or settings to achieve it. However, I do agree that it will be more user-friendly for management and organizations requiring this kind of control filter to prevent users from viewing other sensitive information.
