Text animation controllable by mouse?

I see how I can display a series of bullet points (paragraphs) one by one using text animation. But it seems the only way to do this is to set a predetermined number of seconds for each successive bullet point to display.

Is there a way, using a single slide, to show each successive point when I want to, such as by a mouse click? Or do I have to make multiple duplicates of the same slide and "morph" them, with each successive slide adding the next bullet point?

In testing, when I add an Appear animation to a placeholder full of text, the Effect Options dropdown is set to By Paragraph and each paragraph animation is set to On Click. So by default, text should be appearing as you describe. Somehow your slide has had different settings applied.
