I would like to use Python in excel function but cant see that option

When I install m365, the "Insert Python" function is there in the formula tab. Once it passes midnight, and I restart the next day it disappears.

    You may try input "=PY(" to check whether you can use Python function. If you get error, check whether you have PYthon subscriptions.
