    Dear Wynandv

Good day! Thank you for posting in the Microsoft Community. We'll be happy to help!

First of all, we regret for the inconvenience and inconvenience caused to your work. Based on your description, I have a general understanding of your question, seemly the only way to achieve your ideas is to disable synchronization between outlook client and outlook mobile, then please kindly refer to following information

    1. Remove Device Partnership: Sign in to Outlook on the web. Go to Settings > General > Mobile devices. Select the device you want to disable synchronization for from the list and choose to delete the device partnership. This will prevent synchronization between that device and your mailbox. For your reference Fix email sync issues or remove a device from your Outlook mailbox - Microsoft Support
    2. Disable Sync Settings: On your Android phone, go to the Outlook app settings and turn off the sync settings for your email account. This will stop the app from syncing emails, contacts, and calendar events with your desktop Outlook

Meanwhile, if you still need further help or I misunderstood your meaning, please kindly correct me and share more details(such as your account type) with me so that I can do further research and tests, thanks.

Thank you in advance for your understanding. Your patience and cooperation will be greatly appreciated. I hope all the best!

    Sincerely
