I understand that you can't find the Copilot button in the toolbar. Please follow the suggestions below:
First, check if you can find the Copilot button under File-Options-Customize Ribbon-Main Tabs-Home-Assistance. If you find it, you can add it to your current tab.
If the above step doesn't locate the tab, follow the steps below to uninstall and reinstall the Office application, then try again to find the button through the steps above.

In the pop-up window, you will see the message "Do we agree to run this troubleshooter to uninstall Microsoft 365 or Office?" Select "Yes." A PowerShell window will pop up and begin uninstalling Office, which will complete quickly.
Log in at account.microsoft.com/services, go to your subscription or licenses, and click the "Install Microsoft 365/Office apps" button in the top right corner. This will download an online installer. Run the installer, ensure a stable internet connection, and wait for the installation to complete.
