Update to Windows 11 removed the DRAFT option for print quality. How can I get this back?

In Word, go to File>Options>Advanced>Print and check the box for "Use draft quality"

You may need a new printer driver after you upgraded to Windows 11. Go to the printer manufacturer's web site.

On the other hand, using the built in option in Word may be exactly what you need. See Doug's reply.
