This 2 CPU from the same series are compatible but
Intel® Core™ i7-7820HK is not compatible for windows 11. HK is in terms off performance batter than 7820HQ and 7820X.

Check the Specifications where 7820HK doesn't support vPro Tech,Trusted Execution Test and Stable Image Platform Program (SIPP) whereas 7820HQ does, these might be the requirements for stable functioning of the current iteration of Windows 11. I think this might be bypassed virtually later on.

why there would be a problem supporting this processor. Unless there are more recent builds that have come out that I wasn't offered.

For the best Windows 11 upgrade experience, eligible devices should be running Windows 10, version 20H1, or later.
Check out minimum hardware requirements for the update using the below link,
If your existing Windows 10 PC is running the most current version of Windows 10 and meets the minimum hardware specifications it will be able to upgrade to Windows 11. The upgrade rollout plan is still being finalized, but for most devices already in use today, we expect it to be ready sometime in early 2022.
Not all Windows 10 PCs that are eligible to upgrade to Windows 11 will be offered to upgrade at the same time. To see if your PC is eligible to upgrade, download and run the PC Health Check app. Once the upgrade rollout has started, you can check if it is ready for your device by going to Settings/Windows Updates.

I have the same processor and I'm running the windows insider of windows 11.
Pc heath check tells me the same thing, its not currently supported. -

During the summer of 2021 Microsoft made it clear that only Intel 8th Gen and beyond CPUs were officially supported, however the list may still change.
If you're willing to install Windows 11 manually, then the minimal Windows 11 requirements below will come into play which are:
Processor
- 1GHz (64-bit) processor with 2 or more cores
Memory
- 4GB of RAM
Storage
- 64GB

Intel® Core™ i7-7820Xthese have been added, as the OP stated the i7-7820HK is a superior Chip compared to those two and yet it is not considered compatible. The OP is wondering, As am I, why the better of the three chis is considered incompatible.

It is true that Microsoft changed their minds about the minimum of 8th generation of Intel processors, this is also mentioned in the blog post below:
We did identify a set of PC models that meet the principles while running on Intel 7th Gen processors that we did not originally include in our minimum system requirements. Based on those findings, we have expanded the list of compatible 64-bit processors to include the following:
Intel® Core™ X-series, Xeon® W-series
Intel® Core™ 7820HQ (only select devices that shipped with modern drivers based on Declarative, Componentized, Hardware Support Apps (DCH) design principles, including Surface Studio 2) -

2021-10-06T21:09:17.523+00:00 For me I believe the 7820HQ is on there is because Microsoft's own product uses that Processor. Why not have both Processors supported, they are basically the same.
