Hello. I reset my Android phone and I back up all accounts previously but at the moment to recover the data activating the option ''Back up'' on the app. I press ''Replace backup'' hoping that it would replace the current one with the one I had all my accounts and not the other way around.
I need to recover my previous backup with all accounts

Your only hope is that the backup went to a different email? Otherwise you may be left with using the service provider's methods to recover the account.

As an example for a microsoft personal account you can use the Microsoft account recovery form

I accidentally replaced the backup of the Microsoft Authenticator app and I need to get that backup back
If it has been overwritten then I'm afraid that isn't possible. You may be left with using the service provider's (facebook, google, or other) methods to recover the account.
