So to update this, this was not fslogix related. Apparentley I installed the server with no internet connection and just WSUS for updates and it seemed like the Windows Defender signatures didn't get updated causing corruption in FSLogix vdisks. It's a theory, but I recreated my image with an internet connection and let Windows Update run over the internet and all issues are gone. I'm happily running the latest version now without any issues.

Don't know if anyone else has the same issue but since we've upgraded to 2.9.7838.44263 our Citrix servers (Windows 2019) are randomly crashing.
The logs show entries like this:
The system failed to flush data to the transaction log. Corruption may occur in VolumeId: \\?\Volume{34452b55-3775-4ac8-abe5-e695dc7e5eae}, DeviceName: \Device\HarddiskVolume10.
(The I/O device reported an I/O error.)

The IO operation at logical block address 0x3f3e28 for Disk 5 (PDO name: \Device\0000006a) was retried.
This goes on and on and on for five minutes for all mounted VHDX files. Then the entire Citrix server crashes.
