Thanks for reaching out. To help you better, which apps show the blue text. Word, Excel, Outlook, or also Windows menus?

If this is only in Word or Office, set the default font color to black by opening Word, pressing Ctrl + D, selecting Font Color as Automatic or Black, then choosing Set As Default for all documents. If this affects Windows system text too, you might have a high contrast theme turned on in Settings, so check Settings, Accessibility, Contrast Themes, and switch back to None.
