Navigate to Settings -> Update & Security -> Windows Insider Program -> Stop Insider Preview Builds.

At this moment the only "retail" version for Windows 11 is the direct upgrade from Windows 10. In this regard, Windows 11 follow an inherited activation model that requires to be upgraded over the Windows 10 product. (as explained here: https://learn.microsoft.com/en-us/windows/deployment/windows-10-subscription-activation)
Up to this point, the evaluation copy or Technical Preview of Windows 11 does not offer option to move into a retail mode.
