    Hi!

    Welcome to Microsoft Q&A forum.

OneNote is displayed as a virtual printer known as OneNote (Desktop) or OneNote (Desktop) - Protected. To prevent oneself from printing using OneNote, you should choose an alternative printer other than OneNote..

By stripping it down to just your Epson WF-3720, you basically removed all those conflicts, so things started behaving normally again.

OneNote appears as a virtual printer called OneNote (Desktop) or OneNote (Desktop) – Protected. To avoid using it when printing, select a different printer in the print dialog instead of OneNote.

If Windows protected print mode is enabled, the classic OneNote (Desktop) printer is removed automatically and only the protected IPP-based printer remains. In that case, simply choose another available printer when printing.

If the OneNote printer was accidentally removed and is reinstalled but not wanted, it does not run in the background by itself; it is only used when explicitly chosen as the printer. Leaving it installed but never selecting it is sufficient to stop OneNote being used for printing.
