I decided that I wanted to disable , or "Unlink" OneDrive on my Windows 11 PC. I had begun to have a hard time finding certain files that I had saved. I disabled my link to OneDrive and now my "Documents" folder no longer appears. Can someone give me an idea about how to reinstate this folder?

I want you to open this Folder Path:
Open (This PC) --> Open (C: Drive) --> "Users Folder" --> Choose your username Folder --> You should have the (Documents Folder) their & (OneDrive - Documents) Folder.
Then,
Write Click on it --> Properties -- > Locations Tab --> Verify the Location Path

Is it missing from File Explorer>Home? How about in your Library?
If your Documents folder shows in your Library, you can pin it to Quick Access by right clicking on Documents.
