Unfortunately, AFAIK, there is no direct setting or toggle to completely remove or hide the Copilot icon and features in the Microsoft Word app on an iPad. Mobile versions of Microsoft 365 have fewer configuration options than the desktop applications.
As a workaround, you can open Word, tap the Settings (gear) icon, go to Privacy Settings, and disable content analysis or connected experiences, if those options are available. This may reduce some AI-related functionality, although it typically does not remove the Copilot icon itself. Another option is to use Word through a web browser, such as Safari, by signing in to Office.com, which may provide a different interface if the native iPad app becomes too distracting.
