I have had a staff member leave out organization and would like to have her subscription removed.
I would also like to add a new team member to our subscription, can you please advise how I go about making these changes

This is a public Microsoft community forum. I am a community member providing guidance and do not work for Microsoft or FIN365, nor do I have access to your Microsoft 365 subscription or account information.
Could you please confirm:
If you purchased Microsoft 365 directly from Microsoft, an administrator account would normally have been created when the Microsoft 365 tenant was first set up. This account often uses an @onmicrosoft.com address and may be able to access the Microsoft 365 Admin Center.
If your Microsoft 365 subscription is managed through FIN365 or another IT provider, they may be able to help you remove the former employee's license and assign it to the new team member. I would recommend contacting your provider directly, as they may have administrative access to your Microsoft 365 tenant and can make these changes on your behalf.
my apologies, i thought I was reaching out to FIN365 as I have a subscription with them for our CRM. I have come to the community page that was included my FIN365 subscription. I do not know who to contact to have my CRM subscription updated.
Since your subscription is with Fin365, you will need to contact Fin365 directly. If you're unsure who to contact at Fin365, I recommend:

If a staff member has left your organization, you can remove their Microsoft 365 license and then assign that license to your new team member. You must be at least a License or User Administrator to assign licenses.
As an administrator:
If the user has left the organization permanently, you may also want to block sign-in to prevent further access.
After confirming that any required mailbox, OneDrive, or other business data has been retained or transferred, you can delete the account if appropriate.
This also helps ensure the former employee can no longer access organizational resources while allowing you to reassign their Microsoft 365 license to the new team member.
