Microsoft shared a post explaining why they have this requirement, take a look at:

You may open start and search for feedback and open Feedback Hub app and share your concern.
Why is Windows 11 not supported on my "Microsoft" surface book that is slightly over 2 years old.
I ran the upgrade to Windows 11 and the system checker said my CPU was not compatible.
My 2 year old $2000.00 Microsoft surfacebook is not compatible with the next version of Windows?? Really?
