Do you need to force the user's notebooks to be saved on SharePoint?
Or do you want to migrate existed notebooks from OneDrive to SharePoint or set the default save location as SharePoint directly from the user’s point of view?

Did you or some users sync a document library on SharePoint to OneDrive client?

Here is one way to set the default location for notebooks, open OneNote > Go to File > Options > Save & Backup, then modify the "Default Notebook Location", choose one folder from SharePoint, which is like the folder of "Team1 - Doc127" on following image.

I see this when I open OneNote, where exactly will I go (What buttons will I click) to get to the "Save & Backup" screen as per your screenshot above?

This version of OneNote that you open is "OneNote for Windows 10", which is an UPW app and not supported on Q&A forum currently,
What I mentioned in the reply above is “OneNote (formerly called “OneNote 2016”)”.
For more, please refer to "What's the difference between the OneNote versions?".

So, could you please search "OneNote" in Windows Search Box again and open OneNote to have a check?

I do not suggest you remove OneDrive connect service, as the steps that I mentioned above that syncing files from SharePiont to your computer needs to use OneDrive for Business. If you disable it as the link says, then all Office apps could not connect to OneDrive, most importantly, this also affects notebooks that needed to be saved on SharePiont.

Actually, if you set the "Default Notebook Location" to SharePoint, you just choose "This PC" to create new notbooks, then the location is your SharePoint.

After sync, you could go to the File Explorer, find a folder that has the name of your organization. And you could stop snycing in OneDrive settings.
